Chai Cardamom Cake

With all the spicy-ness in the weather, what better way than to welcome Fall with a bite of Chai Cardamom Cake. To cut the sweetness, I’ve added some clove and ginger powder that will take you up on a spice journey. Enjoy this cake as is with a hot cup of chai or simply frost it up with cream cheese to mix and match your taste buds.

Dry ingredients

Growing up I’ve seen my parents, grandparents, friends and literally everyone in my family gathering over a cup of tea and discussing anything and everything. Tea has been and still holds a very important place in my life! What better way than to add tea as an ingredient to my cake making journey and adding a desi touch to this cake recipe. 

Cake layer

The recipe is an inspiration by Food Duchess and I’ve tweaked a few ingredients to match my taste buds. 

Chai Cardamom Cake

  • 2 cups Whole Milk
  • 6 Chai Tea Bags 
  • 5 cups Flour
  • 3 tsp Baking Powder
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 1/2 tsp powder Cinnamon
  • 2 tsp powder Cardamom
  • 1 1/2 tsp Ground Ginger
  • 1 1/2 tsp Allspice
  • 1 1/2 tsp Cloves 
  • 3 cups White Sugar
  • 6 Large Eggs
  • 1 1/3 tsp Vanilla Extract
  • 1 ½ cup Vegetable Oil

Cream Cheese Frosting

  • 1 cup Cream Cheese
  • 1/2 cup Unsalted Butter
  • 4 cups Confectioners Sugar
  • 2 tsp Vanilla Extract
  • Pinch of Salt
  • 1 tbsp Meringue powder

Making the Chai Cardamom Cake Layers

  1. Preheat oven at 350 degrees.
  2. Add milk to a small saucepan on medium heat and add tea bags into it. Just when the colour of tea is visible remove the pan from heat. Cover and steep for 2 hours. Let this mixture cool in fridge for an hour.
  3. In a large sized mixing bowl, add flour, baking powder, salt, cinnamon, cardamom, ginger, allspice and cloves, then whisk together to combine.
  4. In a mixer add eggs, sugar, and vanilla essence. Beat on high for around 5 minutes until the mixture looks fluffy and almost triple in volume. Then drizzle oil and beat for another minute.
  5. Next add the dry mixture to the wet mixture, mixing until just combined. Remove the tea bags from the tea-infused milk and add to this mixture. Mix only until the batter becomes smooth. At this point the mixture is quite guey but it’s ok! 
  6. Grease the pans with butter and line the base of cake pan with parchment paper.
  7. Add the batter evenly to the cake pans, and bake for around 45-55 minutes, or until a toothpick comes out clean. Allow to cool completely before stacking/frosting.

Making the Frosting

  1. Combine cream cheese and butter in a medium size mixer.
  2. Add icing sugar, salt and meringue powder.
  3. Beat until it’s fluffy. 
  4. Add vanilla essence and enjoy!

LEGO means Lets go!

I am a Lego mom 😉 You thought I was too young or too immature to be a mom? Well to be honest, I still want to get pampered by my parents but coming to the reality I need to play the role of a good mama and like all moms out there provide the best of everything to my kids! Be it their physical needs or emotional ones, I’m making an effort to provide them with what is in my control.

Recently my younger one had his 8th birthday and he is the sort who loves to build, play, analyze and then destroy lego and later recreate something different with his lego bricks. His growing interest in LEGO isn’t surprising to me. Since he was 2, he started building small figures out of lego bricks. Recently he build an helicopter that is more age appropriate for 14 year olds.

This just makes me happy as he is developing the critical side of the brain and at the same time burning his energies in a constructive way. I really wish (don’t want to impose though) that my younger one decides to do Robotics engineering with his increasing interest in lego! 

With his growing interest in lego and patience to build I knew he would want a Lego party this year! A Pikachu Lego theme birthday seemed like a great idea and I thought I’ll manage something at home but with his social personality it wasn’t possible to cater 15 boys at home.

I was looking for options and came across https://www.bricks4kidz.com/canada-alberta-calgary/ and to be honest finding a lego place was a big relief! Bricks 4 Kidz have recently opened their own creativity centre where birthday parties can be catered. They hold various classes/camps for kids as well.

Coming back to the 2 hour long party I had a few concerns and was worried if everyone would be able to finish making their builds; in our case every kid was making a robot. Fortunately, the team at Bricks 4 Kidz had planned it well that not only did kids managed to make robots and played with them but later made their mini figures on a racer for zip lining activity.

For birthday parties they have many special themes depending on the child’s interest. Minecraft, Pokemon, Star Wars, Jurassic Park, Super Hero’s or a basic build like a movable car or plane. In our case, we left home with Pikachu theme in mind and hence that ballon accompanied us but later Momin changed his mind (just like any kid would do if he is given fancy options) and opted for the robot.

Im a clean freak and can’t tolerate dirty hands or dishes 😉 Can you imagine, the team at bricks 4 Kidz had kept 5 minutes designated for hand washing before we served the food! these 5 minutes were part of 2 hours. Hygiene station was easily accessible to all kids with proper washing and sanitizing instructions.

While building lego, I could see how all the kids were deeply involved and surely persistence was the key. Staff kept on encouraging kids to have a go, take their time and voila a robot was created. They provided motors and it moved its head as well. Having fun is great but if it provides some fine motor skills and develop the analytical side of the brain, its a win win situation!

Kids were very comfortable as we were the only ones in the facility.

The whole place is booked for one particular party making kids comfortable. I was also very relaxed and not worried that I can loose track of any kid. Mommy brain issues were sorted.

A designated room had all the lego tables with a zillion pieces where assembly instructions were provided by dedicated staff. In another room kids enjoyed zip lining with their lego figures and later cake and food was served in the party room.

The staff greeted all the kids, hung their jackets and led them to the free play zone. once all the kids had arrived ,they provided the required instructions in a manner that was easily understood by kids. All the instructions were quite handy and everyone completed their tasks within the given time frame.

They provided plates, cups, forks and knives needed for the cake and food. Plus had a full functional kitchen so our pizzas were served hot and ice-cream cake stayed intact in the freezer.

The party room had a 6 foot tall Darth Vader that was made to look like a Lego man and kids enjoyed posing with it. The blessing for me was not to worry about clean up! After the party, we gathered our gifts and just left. it was a lego icing end to our day.

All the kids took their lego figures home as party favours and I’m sure they would be cherishing the time spent at the party! The birthday boy received a special lego present and he was too excited to add his latest build to his lego collection. 

~ SookePoint ~ Ocean Cottage Resort

Away from the hustle and bustle of city life, a stone has been lying untouched. There are times when we are looking just to refresh our minds. The past few months have been very tiresome for us as a family and this short vacation was the answer to our tiredness.

Craving for a naturalistic spot, my husband came across a lovely cottage resort; an hour drive from Victoria. He decided to splurge on this cottage and treat our eyes to the spectacular ocean views. February happens to be my birthday month and my husband planned this beautiful place as a gift for my 35th birthday.

It was a beautiful drive from Victoria to Sookepoint with ocean flowing on one side. Winding roads through forests and exploring around, we arrived at the cottage mid day.

As soon as we entered the cottage, it felt like a dream come true. I have mostly seen such views in movies but this was my movie and I wasn’t playing a role but enjoying reality. The weather was favorable with sun shinning brightly, the waves hitting the shores and I couldn’t help but be grateful for being in that moment.

The cottage rules were mentioned on one of the walls and it touched my heart!

The living room had open glass windows giving access to the balcony facing the ocean. Clear blue skies with emerald green water could not be captured by the camera eye. You need to witness to see what it actually felt!

The cottage had 2 cozy bedrooms with an en-suite washroom and laundry with the master bedroom. Every room had its own fireplace and TV making sure there was no fight over the TV remote. Adults and kids could enjoy their unwinding times without bothering anyone!

When we are at peace with ourselves, our mind and heart cooperate with us too! Did I make any sense? Well certainly I was at peace and could do some work while enjoying ocean views and sipping my cup of hot tea!

The cottage had all the required utensils, pots and pans to make us comfortable for the 2 nights that we stayed.

There was no point in going back to Calgary (home) and leaving behind these views but life has to move on! We need to go back, work harder and earn more to enjoy more vacations!

Forever grateful for this opportunity to be able to spend some quality time over this family weekend!

Chocolate Mousse Recipe

Chocolate mousse is the ultimate dessert for any chocolate lover. I like mine to be extra rich in flavour and very light in texture. Disclaimer Alert: You will not have any left overs when you make this easy 4 ingredient chocolate mousse. For this your stars can thank me later!

In less than 20 minutes you can make this heaven and your chocolatey cravings will be satisfied. Its light, rich in flavour and deliciously decadent! Delicious things that are simple to make, are my game! Without wasting more of your precious time, read the following recipe and hit your kitchen!


  • 4 egg yolks (room temperature)
  • 4 TBSP granulated sugar
  • 2 cups heavy cream
  • 8.oz Chocolate chips (I used 60% cocoa, you can reduce the cocoa percentage depending on your taste buds)

Since this recipe calls for just 4 ingredients, make sure to use good quality chocolate.


  • Whisk together egg yolks, 2 tablespoon sugar and 3/4 cup heavy cream in a medium saucepan. On medium to low heat, stir for 2 to 3 minutes until a solid layer forms at the back of your spoon. Do not let the mixture boil as it will spoil the texture of the mousse.
  • Pour this hot pudding like mixture on Chocolate chips and let it sit for 2 minutes. This hot mixture will help chocolate chips to melt. Mix nicely using a spatula so avoid any chocolate lumps.
  • Pour the remaining 1 1/4 cups of heavy cream and 2 tablespoon sugar in an electric mixer and whip the cream until you get moderate peaks.
  • Fold this whipped cream and chocolate mixture together to get your heavenly mousse.

Chill for 30 minutes and indulge yourself in this yummy treat. It can be made and kept in the fridge for up to 3 days.

I had some leftover chocolate cake and layered this mousse in between.
